
Hi there friendos! We are back with our favourite 2/3/4 ingredients super simple recipes.
A complete meal with only 4 ingredients. WHAT!!! I love recipes which use very few great quality ingredients and each one just shines bright in the end result. Super simple super yummy and zero effort = comfort zone.

The recipe below uses massive sized scampi shrimp, butter, chilli oil, salt and pepper. That's it. Technically 5 ingredients including salt. I like to make this every time I get massive shrimps and am lazy to do anything else with it. It works for Sunday brunch, dinner parties, date nights - literally any time and you can pair it with just about anything. My usual go-tos are chilli butter fried rice or a nice fresh fruity salsa. Yep you guessed right - I use the exact same ingredients to toss my rice in. And I prefer a fruitier citrusy salsa like orange or sometimes mango or actually even avocado. You really can't go wrong here.

I've used Desi chilli oil in this video but it really depends on your preference. If you're going for something more garlicky then use the Spicy Garlic chilli oil. Really upto you. I've tried both and both are great!
Now on to the recipe!
INGREDIENTS:
- 3-4 large scampi shrimp
- 2-3 tbsp butter
- Salt and freshly ground black pepper, to taste
- Your preferred chilli oil - I've used Desi here
- Chopped parsley for garnish - I completely forgot to do this part here lol
DIRECTIONS:
- Clean the shrimp thoroughly. Next season it with salt and pepper. I use just a pinch of salt as I like to use salted butter later. If you're using unsalted butter adjust accordingly.
- Heat up a pan with butter. Next add all your shrimp. Cook over medium high heat for 5-6 mins each side.
- Once the scampi is cooked, remove on a plate and add all the juices from the pan on to the scampi. Now add a generous helping of chilli oil to each scampi. Voila! Serve with garlicky rice or salsa!
- Also garnish with parsley lol (I always forget to do this :/)
